Gum Arabic
 

 
Gum arabic is a natural gum consisting of hardened plant sap. It has a low viscosity. The gum dissolves quickly in cold water and it is possible to prepare a 50% solution without precipitation.
It shows good emulsifying properties, especially in oil-in-water systems, and is widely used as an emulsion stabilizer.
