Isomalt

Isomalt is also known as Palatinit. Converted from sucrose using enzymatic action, it is an edible sugar alcohol used as a low GI functional food because it provides half the energy when compared to sucrose and is not utilized by the human body. It presents a natural sweet taste, and it can be used with sweeteners of higher intensity for synergistic effect. It is stable under acid or alkaline conditions and is relatively easy to work with. Also it helps prevent tooth decay.
