Xanthan gum is a polysaccharide gum with high molecular weight. It can soluble in cold water. The mixture even at lower concentration, shows high viscosity and provides a pseudo-plastic gel. Also it is stable in acid or alkaline, temperature and shear. It can be used as thickener, water retainer, and is homogeneously suspended in the solution.
