Carrageenan

Derived from red algae extract, carrageenan is a hydrophilic gel in three primary forms: kappa, iota and lambda.
We provide kappa and iota gels. When potassium ion is introduced, kappa-carrageenan forms a clear, stronger gel which is hard and brittle, and can be mixed with other hydrophilic gels. Iota-carrageenan provides a soft, resilient gel which is stable under refrigeration and capable of retaining water.
Form : Powder
Applications : Instant jelly, jelly, pudding, ice cream, dairy and meat product processing
