Propylene Glycol Alginate

An esterification product of alginate, propylene glycol alginate (PGA) is resistant to acidity and salt, and is primarily used as a thickener. With good foaming and emulsifying abilities, it is also applied in lactic acid drinks, salad dressing, beer (as foam stabilizer). It also used in baked products to improve dough resilience and elasticity, and cake texture.
